Robyn Webb's Cosmic Chili Recipe

  1. Heat the oil in a large, heavy saucepan over medium-high heat. Add the turkey and cook about 5 minutes until browned, stirring to break up any lumps. Drain off all but 1 teaspoon of the oil.
  2. Add the oinion, green pepper, and garlic to the pan and cook for 3 minutes, stirring often.
  3. Add the chili powder and cumin and cook for 1 minute. Add the tomatoes and bring to a boil. Reduce the heat to low, cover, and simmer, stirring occasionally, for 20 minutes. Add the beans, salt, and pepper, and cook for 3 minutes more.
  4. Serve each portion topped with some of the cheddar cheese.

 

Serves: 6 Serving Size: 1 cup Preparation Time: 30 minutes
Cooking time: 30 minutes  
Ingredients:
1 tablespoon olive oil
  1 pound lean ground turkey
  1 medium-size onion, peeled and diced
  1 medium-size green bell pepper, cored, seeded, and diced
  2 garlic coves, peeled and minced
  1 tablespoon chili powder (or more to taste)
  1 teaspoon ground cumin
  1 can (28 oz.) crushed tomatoes
  1 can (14 oz.) kidney beans, drained and rinsed
  Salt and pepper to taste
  1/2 cup reduced-fat shredded cheddar cheese
